Fat-free sour cream, tomatoes, shredded lettuce, corn and black beans add variety, flavor and vegetables to the meal. If you want some texture, add crumbled baked tortilla chips and top with reduced-fat cheese and hot sauce.
Spread barbecue sauce on a homemade or store-bought pizza crust. But skip the traditional fattening pizza toppings like pepperoni, sausage and extra cheese. Instead, top with diced tomatoes, corn, black beans and other creative, and reduced-fat mozzarella cheese. Bake until the cheese melts and the crust becomes crispy.
Tortellini and spinach soup
To make tortellini and spinach soup, sauté onion, red bell pepper and garlic in olive oil. Add salt, basil, oregano and crushed red pepper. Add diced tomatoes, chicken broth and spinach. Bring reduced fat, low sodium chicken broth to a boil and add a frozen package of cheese tortellini. Add fresh spinach when the pasta is done.
